Ayurveda calls ginger ‘the universal medicine’ – it is good for so many ailments.
Ginger is great for cleaning the colon. It also opens the channels, purifies the blood, improves the appetite, and enhances the taste and protein synthesis.
There are three types of ginger: fresh, dry (as root or powder), and sunthi (Ayurvedic cured dried ginger). Fresh ginger and ginger powder are quite heating and drying.
Sunthi is the preferred spice – it has been cured before dehydration and is a lot less drying and heating.
Predominant taste – pungent/very heating.
